Tammi's White Chocolate Cheesecake with Praline Sauce

I used to think the only thing that could make my knees go weak was a man. That was until I met this cheesecake. I came up with this recipe by marrying together three other recipes and taking the parts I liked from each. You see I'm about texture. I like a creamy more custard like cheesecake, not the dense New York style. No offense to the big apple.

Tammi's White Chocolate Cheesecake with Praline Sauce

Crust:

2 2/3 cups Nilla wafers

1 Tbsp sugar

2 tbsp melted butter (cooled)

1 tsp vanilla

½  cup toasted pecans(recipe to follow) or y

Cheesecake:

2 Bricks of cream cheese

1 can condensed milk

½ cup sour cream

¼ cup sugar

2 eggs

2 egg yolks

¼ cup lady Godiva White Chocolate Liqueur

Glazed pecans:

 ½ cup white sugar

½ tbsp. corn syrup

1/8 cup(2 tbsp) evaporated milk

1Tbsp molasses

1 ¼ cups pecans or walnuts

Dash of vanilla

Lagniappe Sauce(Praline sauce)

½ cup light brown sugar

 ½ cup heavy cream

 ¼ cup butter

 1 cup pecans (or walnuts)

 2 tsp vanilla

Glaze pecans first so they can cool. In a cast iron skillet over medium high heat mix sugar, corn syrup, evaporated milk, molasses pecans. Bring to a boil and boil for 4 minutes, stirring constantly. Remove from heat and pour nuts and stir to coat all nuts evenly. Pour out on wax paper to cool. Give nuts a a rough chop.In a small food processor combine vanilla wafers, sugar butter and nuts. Pulse until all cookies are now crumbs. Spray springform pan with non stick cooking spray until bottom is completely covered. Put in freezer for 10 or 15 minutes to set. In a large bowl soften cream cheese for about 45 seconds in microwave. Then cream with hand mixer til fluffy. Slowly add the condensed milk to completely combined. Add eggs, yolks and sugar and liqueur.. add sour cream. Bake at 325 degrees 45 -50 minutes. Remove from oven and let cool. Then chill for at least 4 hours.

Praline Sauce:

In a cast iron skillet combine brown sugar, heavy cream, and butter on medium heat. When it comes to boil , let it boil for 2 minutes. Remove from heat and add pecans and vanilla.
